Mangai Thokku (Raw Mango Pickle)

Ingredients:

Raw Mangoes               -  500 gms
Gingely oil                     -  100 gms
Red chilies                    -  100 gms
Methi                           -  1 table spoons
Mustard seeds              -  1 table spoon
Turmeric powder          -  1 tea spoon
Asafoitida                     -  1 tea spoon
Salt to taste

1.  Heat a kadai, add the methis and dry fry them till they turn dark brown.
2.  Heat the kadai, add methi and dry fry till they turn dark brown.
3.  Now remove methi from kadai, add the red chilies and dry fry them till they turn brown.
4.  After cooling grind both methi and red chilies and keep them separately.
5.  Wash and grate the raw mangoes.
6.  Heat oil in a kadai, add mustard seeds.
7.  After they crackles add the grated mangoes, salt, asafoitida and turmeic powder.
8.  Stir continuously till the mango cooks and oil splits.
9.  Add the ground red chili powder and methi powder and stir well for a few mins and remove from stove.
